Polyfenolit ovat kasvien toissijaisia aineenvaihduntatuotteita, jotka voidaan ryhmitellä pääluokkiin kemiallisen rakenteensa mukaan. Niitä esiintyy runsaasti marjoissa ja niillä on erilaisia ominaisuuksia, jotka voivat vaikuttaa ihmisen terveyteen. Tämä LuK-tutkielma käsittelee syötävistä marjoista löytyviä polyfenoleja ja niiden vaikutuksia ihmiselle.
