dc.description.abstractRuokapakkauksissa käytettävästä kartongista ei saisi siirtyä ruokaan haitallisia tai vaarallisia yhdisteitä. Kemialliset komponentit jotka muodostuvat elintarvikepakausmateriaalin valmistuksen yhteydessä tahattomasti (esim. additio- ja hajoamistuotteet), ovat erityisen tärkeitä materiaalin turvallisuuden arvioinnissa. Tutkimustyö liittyen tahattomasti lisättyihin aineisiin (nonintentionally added substances, NIAS) on viimeaikoina ollut kasvussa. Mitä enemmän tietoa näiden yhdisteiden luonteesta saadaan, sitä tarkemmin voidaan lainsäädännöllä valvoa ruokapakkausten turvallisuutta. Tässä pro gradu -tutkielmassa käsitellään mahdollisia ruokapakkauskartongin NIAS-komponentteja. Työn alussa esitellään kartongin valmistusta, valmistuskemikaaleja, sekä ruokakokntaktimateriaaleja. Tämä jälkeen käydään läpi NIAS-yhdisteiden luokittelua alkuperän mukaan mm. reaktiotuotteisiin, epäpuhtauksiin ja kontaminaatioihin. Seuraavaksi työ käsittelee elintarvikepakkausten ja NIAS:ien lainsäädäntöä maailmalla, painottuen erityisesti EU:n ja Yhdysvaltain lainsäädäntöön. Kappaleet 6 ja 7 käsittelevät ruokakontaktikartongin NIAS-aineiden kemiallista analytiikkaa ja riskin arviointia. Tämä sisältää esimerkkejä mm. näytteen esikäsittelystä, analyysilaitteistoista sekä määritysmenetelmiä yhdisteiden migraatiosta, altistumisesta ja myrkyllisyydestä. Lopuksi tutkielma tarkastelee viimeaikaisesta kirjallisuudesta löytyviä kierto- ja tuorekuitukartongin NIAS-yhdisteitä, painottaen erityisesti niiden alkuperää sekä muodostumisreittejä.fi
dc.description.abstractPaperboard used for food packaging should be free from any potentially hazardous or detrimental substances that could be transferred to food. Chemical components that form unintentionally during manufacture (eg. combination or degradation products), are especially important when assessing the safety of the food contact material (FCM). Lately the interest towards research of these non-intentionally added substances (NIAS) has been growing, and as more are known about the nature of these compounds, the better legislation and regulation can be made to ensure the safety of FCMs. This Master’s thesis discusses the possible NIAS in food contact paperboards. It first introduces concepts about paperboard manufacture, manufacturing chemicals, and food contact materials (FCMs). After this, the origin-based NIAS classification and NIAS groups such as reaction products, impurities, and contamination are discussed. The thesis then reviews some of the global legislation concerning FCMs and NIAS, focusing mainly on EU and US regulation. Chapters 6 and 7 handle chemical analysis and risk assessment of paperboard FCM NIAS. These include eg. sample preparation techniques, analysis instrumentation, and estimation of component migration, dietary exposure and toxicology. Finally the thesis concludes by discussing some recycled and virgin paperboard NIAS found from recent literature, placing emphasis especially on the origins and routes of formation for the components.en
